Enchilada Recipes - Real Mexican Food And More

If you're anything like me, you're always on the lookout for good enchilada recipes. There's just something about this versatile Mexican favorite that seems to embody the spirit of authentic Mexican food, perhaps more than any other.
Just think about it: You have chicken enchilada recipes, as well as ones that include beef, pork, shrimp and other seafood. Some enchilada recipes have no meat at all, but which still include one or more of various cheeses. There are enchilada recipes for vegetarians which forgo the meat - and even the cheese - altogether, although admittedly, these don't rank high on my list of favorites. For me, a "real" plate of enchiladas must have at least a healthy serving of cheese - with all respect to you vegetarians out there.
And then there's a nearly endless array of toppings and fillings: red, green, and yes, cream sauces, and the many variations upon those (can you say chicken enchiladas
suizas?) You can use avocado, black (ripe) olives, as well as cilantro and sour cream - I don't know about you, but I'm getting mucha hambre right about now, and we're only getting started!
Anyway, I think you're beginning to see that if you're looking for great enchilada recipes, you've come to the right place. However, I'll admit it right up front: I'm a bit of a Mexican food snob! I grew up in Las Cruces, New Mexico, and - together with many family members and friends - regard it as having the best Mexican food in the world. To me, Mexican food from other parts just doesn't compare - but maybe you feel differently! Well, my blog is now up and running (see link below), so don't be shy to post your comments, and even your own enchilada recipes. So let's swap recipes, have a little fun, and maybe even discover some (hopefully) authentic Mexican food along the way.
In fact, I've found a nice collection of Mexican food recipes, including some very good enchilada recipes. I haven't tried all of them (yet!) and obviously, you'll find quite a bit more than just enchilada recipes, but I've seen enough to give it a "thumbs up."
