Compared with people who consume a diet with only small amounts of fruits and vegetables, those who eat more generous amounts as part of a healthful diet are likely to have reduced risk of chronic diseases, including stroke and perhaps other cardiovascular diseases, and certain cancers.

Fruits and some vegetables contain substantial amounts of carbohydrates, which supply most of the energy, used by humans, to live and perform work.

Fruits and vegetables contain generous amounts of vitamins. Vitamins regulate metabolism and help in the conversion of the fats and carbohydrates into energy.

Fruits and vegetables are rich in minerals that are necessary for the nerve and muscle function and are the building material for some body tissue.

They help normalize blood glucose, blood lipids and blood pressure levels.

In a recent study researchers say they found antioxidants in fruits and vegetables which may reduce the risk of ischemic strokes, the most common type of stroke caused when blood clots cut off oxygen supply to the brain.
